Billy's Dream Meat
I came up with this last year, as the name implies, in somewhat of a lucid dream. I actually made it a reality not long after, to generally good reviews. It seriously is a lot of work, however. It's all a bit rough, because I don't necessarily believe in following recipes with quantities, except when it comes to baking.

"So I woke up this morning dreaming of roast pork. Well, half-dreaming and half-concocting. Only this was no ORDINARY roast pork. Let me run you through what I'm envisioning:
- Rehydrate about 1/2 a cup of shiitake mushrooms in thinned out solution of oyster
sauce, with a little sake thrown in.
- Meanwhile, marinate one slab of pork loin in sake and soy and a little sesame oil for a couple of hours.
- Take the pork loin, and rub it down with a little sea salt and pepper.
- Take a few sheets of nori and layer it on top of the pork, so it's about 2-3 sheets thick.
- Mix the mushrooms with some mashed potato and finely chopped spring onion.
- Spread the mushrooms in a row along one edge of the pork loin.
- Roll the pork loin up into a log and tie with butcher's string.
- Mix some miso paste with some water to make it spreadable and sticky.
- Put the miso on a big plate and roll the pork to coat.
- Mix some panko crumbs with some sesame seeds (about 2:1 ratio) and put them on another plate.
- Roll the miso-covered pork loin in the crumb/seed mixture.
- Roast for about 1.5-2hrs (based on 2kg roast) at 180C."
Just be careful not to over-do it with the miso - it's pretty intense in large quantities! Maybe mix an egg in with the miso? billyl
